Onion Bread

There are many different ways to make a bread and the taste and smell of freshly baked bread is amazing. This is an old family recipe onion bread. Bread is baked to a perfect golden brown color and decorated with sesame flakes on top. This particular bread is perfect for family gatherings or simply for Sunday barbeques. Recipe require a little bit of effort but taste wonderful. Bread is very rich by taste and excellent for ham or prosciutto sandwich. Bon appetite.


500 gr of white flour
20 gr fresh yeast
2 dl milk
1 teaspoon salt
1 teaspoon sugar
5 tablespoons of oil

Filling for bread:
1 medium size onion
150 gr butter

To smear the dough:
1 egg


Food mixer
20cm round loaf tin

To begin this onion bread recipe, start by making the dough.

Place flour into a bowl, add yeast, oil, sugar, salt and a little lukewarm milk and mix it well all together. Mix all ingredients until dough is stop sticking to the sides of the bowl. Remove the dough from the bowl and knead on a lightly floured surface for 10 minutes. Alternatively put a dough in mixer and mix on medium speed for around 7 minutes.

Place the dough into a lightly greased bowl and cover with water moist (not too wet) tea towel.

Leave in a warm place to rest until will double in size. This should take around 45 minutes.

While dough is resting on the side it is time to prepare onions.

Peel and cut the onion into small cubes.

In a fry pan melt the 20 gr of butter over really low heat. Add the onions to the pan.

Fry the onions quickly on medium high heat moving them constantly around the pan with a wooden spoon. It should take no more than 10 minutes at the most for the onions to get nicely golden brown. Onions should not be burned, they should be a caramelized, slightly crispy outside and a very soft inside.

By the time you finish caramelizing the onions they will be cooked down to about half (or a little bit more) of their size.

Now ad the rest of the butter, turn down the heat and leave onions in pan to cool down.

Now is the time to preheat the oven to 180°C

Take a dough on a lightly floured work surface and leave for 10 minutes to rest. With a rolling pin start form the dough in a rectangular shape around 50 by 30 centimeters. Start to grease dough with previously prepared onions and butter mixture.

Once is greased start to roll the dough to the direction so roll would stay long 50 centimeters and not 30.

Dough like this cut into a remaining 10 equal parts.

Line the pieces of the dough into a pan (round pan 20 centimeters) as one part would face up and down and another left and right. All the pieces should not be lined in the same direction.

Leave it in a warm place for another 10 minutes and then brush with egg, sprinkle with sesame seeds and bake at 180 C until about 35-40 minutes. If there is chance of burning u can always protect onion bread with aluminum foil; so just put the foil over and do not press it down the pan.

When ready, remove the onion bread from the oven and allow to cool it on a wire rack for a while. When is ready to serve no need to slice bread but just to tear into chunks.

Here’s a little tip for baking the bread. Since the dough is kneaded with milk it is the best to consume the bread on the same day.
